1 pack Prime Sea Bass Fillets (400g)
400g cherry tomatoes
2 garlic cloves (finely chopped)
8 back bacon rashers
1 tbsp balsamic vinegar
1 tbsp fresh basil (shredded)
1 lemon (cut into wedges)
Preheat the oven to 200°C and line a roasting tin with non-stick baking paper.
Season the sea bass fillets on both sides and arrange them in the roasting tin.
Scatter over the tomatoes, garlic and bacon.
Drizzle over the balsamic vinegar and roast for 20 minutes or until the fish is just cooked through.
Scatter over the basil and serve hot with lemon wedges.
